Wet Milling of Wheat

Wet milling is an industrial process used to separate the main components of various grains through a combination of physical, chemical, biochemical, and mechanical operations. Today, this process is widely used in the processing of corn and wheat, but there is also potential for its application to other cereal crops, such as sorghum, barley, oats, and rice. The fractions obtained during wet separation can be used in a wide range of food and non-food products.

The wheat wet milling process typically consists of the following stages:

Cleaning: Wheat grains are thoroughly cleaned to remove impurities such as dust, stones, and other foreign particles.

Steeping: The cleaned wheat grains are soaked in water, usually for 24–48 hours. This stage helps soften the grains and loosen the outer layers.

Milling: The steeped wheat grains are milled into a fine paste or suspension. This stage helps break down the grain structure and separate its various components.

Separation: The milled suspension is passed through a series of screens, centrifuges, or hydrocyclones to separate the components according to their size and density. This process allows starch, gluten, fiber, and other by-products to be separated.

Starch Recovery: Starch is separated from the suspension using a combination of physical and chemical processes. These may include settling, centrifugation, and the use of enzymes and chemical agents to separate and purify the starch.

Gluten Separation: Gluten, the protein component of wheat, is also separated from the suspension. This is typically achieved through controlled settling of the suspension followed by additional purification stages.

Fiber Recovery: The solid materials remaining after the separation process, consisting mainly of fibrous components, are collected and dried for use as animal feed or for other applications.

Structure of a Wheat Grain

The by-products generated during the wet milling process include wheat starch, gluten, and fiber. These by-products have a variety of applications:

Wheat Starch: Extracted starch can be used in the food industry as a thickener, stabilizer, or in the production of various food products such as noodles, sauces, and baked goods. It can also be used in non-food industries, including paper manufacturing, textiles, and pharmaceuticals.

Gluten: Gluten has unique viscoelastic properties, making it valuable in the food industry due to its ability to provide structure and elasticity to baked goods. It is widely used in the production of bread, pasta, and other wheat-based products.

Fiber: Fiber-rich by-products, primarily wheat bran, can be used as dietary supplements or added to food products to increase their nutritional value. They are also used as animal feed due to their high fiber and nutrient content.

Wet milling technology continues to evolve, with improvements in equipment and processing methods aimed at increasing efficiency and product quality. These advancements include automated grain cleaning systems, improved separation methods, and the use of enzymes.
