Under vacuum conditions, alcohol is distilled directly in the fermenter and immediately removed after it is formed. As a result, fermentation takes place at a practically zero alcohol concentration. The productivity of alcohol production and the equipment increases by <strong data-start=\"499\" data-end=\"515\">2 to 3 times<\/strong>. The viability and activity of the yeast remain stable throughout the entire fermentation cycle. The alcohol yield from <strong data-start=\"638\" data-end=\"659\">1 tonne of starch<\/strong> complies with established production standards. The hydration ratio of the mash can be reduced to <strong data-start=\"759\" data-end=\"766\">1:1<\/strong>. Foreign microflora and the products of their activity are practically absent under these conditions. The alcohol distillate reaches a concentration of <strong data-start=\"921\" data-end=\"928\">35%<\/strong>, which allows it to be fed directly to rectification without the use of a beer column. The concentration of certain impurities that are difficult to remove during rectification is significantly reduced, while some are completely eliminated. The total content of <strong data-start=\"340\" data-end=\"406\">fusel oils and volatile acids is approximately two times lower<\/strong> than that obtained with conventional fermentation.<\/p>\n<p data-start=\"459\" data-end=\"704\">Rectified alcohol obtained from the distillate is characterised by high organoleptic properties. The dry matter content of the post-distillation stillage reaches <strong data-start=\"621\" data-end=\"631\">26\u201330%<\/strong>, which simplifies its further processing and reduces energy consumption.<\/p>\n<p data-start=\"706\" data-end=\"897\" data-is-last-node=\"\" data-is-only-node=\"\">The resulting post-distillation stillage is a valuable <strong data-start=\"761\" data-end=\"798\">protein and vitamin feed additive<\/strong>, containing at least <strong data-start=\"820\" data-end=\"841\">32% crude protein<\/strong> on a dry matter basis and having high
